California Roll

California roll, a type of inside-out sushi roll (uramaki) in which vinegarweed rice (rather than nori, an edible seaweed) forms the outside of the rollusually encompassing cucumber, crab (or imitation crab), and avocado.


Recipe(serving 9 rolls)

- 2 cups cooked Japanese sushi rice
- 5 Tbsp Sushi Vinegar(Make your own sushi vinegar by combining the following 3 ingredients and dissolving them together over low heat on the stove, then let the mixture cool)

- 4 Tbsp Rice vinegar
- 2 Tbsp sugar
- 2 tsp salt (I used sea salt)1/2 lb Imitation crab meat (p.s. the “log” shaped crab meat is the easiest to work with)
- 1 Avocado, ripe but still firm
- 1/2 medium cucumber, peeled and sliced into long julienne strips


- Toasted Nori Seaweed
Toasted sesame seeds

- Soy sauce (regular or low sodium)
Wasabi paste or wasabi powder

- For spicy mayo: Mayonnaise (~1 Tbsp) and Sriracha hot chili sauce (~1 tsp)  or to taste

Boston Roll

Boston Rolls are filled with creamy avocado, succulent shrimp, and crunchy cucumber, then rolled in nori seaweed sheet and sushi rice!

Recipe(1seving)

For Sushi Rice:

-1 cup sushi rice short grain sushi rice

-1 cup water

-1 ½ tablespoons sushi vinegar (optional) or mixing 1 tablespoons rice vinegar, 1/2 tablespoon sugar, and 1/2 teaspoon salt

For Boston Sushi:

- 3-6 tablespoons tobiko (or masago)

-6 oz shrimp

-1/2 cucumber cut into ½-inch strips

- 2 sheets nori seaweed sheet

-2 avocado ripe but still firm

Optional for Serving:

- Soy sauce

- Wasabi paste

 Philadelphia Roll

Philadelphia roll is a makizushi (also classified as a kawarizushi) type of sushi generally made with smoked salmon, cream cheese, and cucumber. It can also include other ingredients, such as other types of fish, avocado, scallions, and sesame seed.

Recipe:

- 1 cup sushi rice

- 2 sheets of nori (dried seaweed sheets)

- 4 oz salmon (sushi grade raw or smoked)

- 2 8 inch lengths of cream cheese

- 2 8 inch lengths of cucumber spears, peeled & seeded (optional)

- Sliced avocado, optional

- Dried bonito flakes (optional, but a lot of places seem to use them)

- Sesame seeds (optional as well)
